The wine is medium bodied with soft but intense tannins. It has hints of mulberry, and raspberry and a suggestion of currant that lays over the smoky undertone of the oak barrels. It has an overall taste build when on the pallete that lingers after sipped.

Merlot ranks no three in global production volumes of red wine.   It is versatile and used extensively in blends where its softer characteristics enhance the higher tannin varieties. Our merlot is a true example of this versatility and we use the grapes to also make a Blanc de Noir, a MCC and a sweet wine. In addition we use it in our blends as well. The Merlot Reserve is barrel matured for an extra year to develop the acidity and produce a more full bodied wines with a moderate alcohol level.

Vinification

This wine is from the first plantings of Merlot in the Central Drakensberg. This was grapes came in at a Balling count of 22. The primary fermentation was done in our open tanks and fermented at 28 Deg for 5 days. The cap was punched through manually regularly. After this the wine was transferred to stainless steel tanks to complete the Malolactic fermentation until dry.

Food Notes

It goes well steak, venison, roasts, cheese boards and winter evenings - Open 10min before serving - Decant to release the deep aromas. - Best served between 18-22 deg C

Maturation

The wine was matured in new 225 L French Oak Barrels for 36 months. The wine was bottled in 2020 and is ready to drink. It will keep well.
