All grapes have naturally clear juice, regardless of whether their skins are green or dark. The colour in a red wine comes primarily from contact between the juice and the grape skins during winemaking.
Our Merlot Blanc de Noir is made from our versatile Merlot grapes, a red grape variety presented in a completely different style. The grapes are harvested early and carefully handled before being transferred to the bag press, where they remain on the cooled skins for 7 hours. This gentle skin contact allows a subtle amount of colour and character to be drawn from the skins, giving the wine its distinctive light red shine.
Thereafter, the wine follows a process similar to that used in the production of white wines. The result is a fresh, dry and elegant wine that showcases the fruit and character of Merlot while offering a completely different expression of this red grape.
