The wine is medium-bodied, with soft yet intense tannins. It displays inviting aromas and flavours of mulberry, raspberry and currant, complemented by subtle smoky notes from the oak. The palate builds in complexity, with a lingering finish that remains after each sip.

Merlot is a versatile variety that is widely used in blends, where its softer characteristics can complement higher-tannin varieties. Our Merlot is a true expression of this versatility. We use these grapes to produce a still red wine, as well as Blanc de Noir, Méthode Cap Classique (MCC) and a sweet wine, while also incorporating the variety into our blends.

Vinification

This wine is made from some of the first Merlot plantings in the Central Drakensberg. Primary fermentation was conducted in our open tanks at 28°C for 5 days. The cap was punched down regularly by hand. The wine was then transferred to stainless steel tanks to complete malolactic fermentation to dryness.

Food Notes

This wine pairs beautifully with steak, venison, roasts and cheese boards, making it an ideal companion for cosy winter evenings. – Open 10 minutes before serving. – Decant to release the deep aromas. – Best served between 18–22°C.

Maturation

The wine was matured for 12 months in 225 L French oak barrels before being transferred to stainless steel tanks for further maturation. It was bottled in 2026 and is ready to enjoy, with good ageing potential.
