This is the first vineyard block you see when sitting on the cellar veranda, overlooking our vineyards. It is a special part of the Estate and the source of our Blanc de Blancs.

Sauvignon Blanc is a green-skinned grape variety that originates from France, particularly the Bordeaux and Loire regions. Its name is derived from the French words “sauvage” and “blanc”, meaning “wild” and “white”.

In our cooler Central Drakensberg climate, the variety develops vibrant acidity and distinctive green flavours of grass, green pepper and nettles, complemented by fresh tropical fruit.

Vinification

This wine comes from the first plantings of Sauvignon Blanc in the Central Drakensberg. The grapes were harvested early in the morning at 23.4 Balling. The grapes were destemmed and transferred to the bag press, where they remained on the cooled skins for 7 hours. The juice was then transferred to stainless steel tanks and held at 6°C for 3 days. The juice was then settled and fermented for 12 days. Once fermentation was complete, the wine was drawn off and kept chilled in stainless steel tanks for an additional two months before bottling.

Food Notes

The wine pairs beautifully with cheese, cold meats, fish and aromatic curries. – Open and enjoy. – Best served at approximately 10°C.

Maturation

The wine was bottle-matured for 6 months and is ready to drink. It is best enjoyed while young and fresh, within 18 months of bottling. A new vintage will be produced each season.
